    ½ c. finely chopped Hy-Vee dried apricots
    ⅓ c. Hy-Vee apricot preserves
    ⅓ c. Hy-Vee dried cranberries
    3 tbsp. water
    2 tsp. Gustare Vita balsamic vinegar
    1 tsp. grated fresh ginger
    ¼ c. Hy-Vee chopped English walnuts
    1 (8-oz.) round Brie cheese
    Assorted cracker or wafer cookies, for serving

    Directions

    1. Preheat oven to 350 degrees. Combine apricots, preserves, cranberries, water, balsamic vinegar and ginger in a small saucepan.

    2. Cook over low heat 4 minutes or until the mixture begins to simmer. Remove from heat; Cover with lid. Let stand 4 minutes. Stir in walnuts.

    3. Place Brie cheese in a small baking dish. Spoon fruit mixture over cheese. Bake for 10 to 12 minutes or until interior of cheese is soft. Serve with crackers or wafer cookies.
