    1 ½ c.Hy-Vee organic raisin bran cereal
    1 c.HealthMarket organic nonfat milk
    ¼ c.vegetable oil
    2HealthMarket organic eggs
    2 tsp.vanilla extract
    1 ½ c.peeled, finely chopped organic apples
    ½ c.walnut pieces
    2 ½ c.flour
    ¾ c.packed brown sugar
    2 ½ tsp.baking powder
    ½ tsp.baking soda
    2 tsp.cinnamon

    Directions

    1. Preheat oven to 350 degrees. Stir together cereal, milk, oil, eggs and vanilla extract. Let stand 10 minutes. Stir in apples and walnuts.
    2. In a separate bowl, stir together flour, brown sugar, baking powder, baking soda and cinnamon.
    3. Add cereal mixture to flour mixture; stir until just moistened.
    4. Spoon evenly into greased muffin tins. Bake for 14 to 16 minutes or until toothpick inserted in the center comes out clean.
