    3 small organic apples, peeled, cored and chopped
    ¼ c. Hy-Vee granulated sugar
    ¼ tsp. Hy-Vee ground cinnamon
    ¼ c. water
    2 whole Hy-Vee low-fat graham crackers, crushed
    2 tbsp. Hy-Vee reduced-fat whipped topping, thawed, divided

    Directions

    1. In a medium saucepan, combine apples, sugar, cinnamon and water. Cover and heat over medium-high heat 10 to 15 minutes or until water is evaporated, stirring occasionally.
    2. Meanwhile, place 2 tablespoons cracker crumbs in the bottom of each of two sundae dishes. Top each with 1/4 cup apple mixture.
    3. Top each with a dollop of whipped topping and sprinkle with remaining cracker crumbs.
