    1 ½ c. plus 2 tbsp Hy-Vee flour, divided
    1 tsp. Hy-Vee baking powder
    ½ tsp. Hy-Vee baking soda
    ¼ tsp. Hy-Vee salt
    2 ½ tsp. apple pie spice, divided
    2 Hy-Vee large eggs
    ½ c. Hy-Vee low-fat apple granola yogurt
    6 tbsp. Hy-Vee butter, melted, divided
    1 ¼ c. plus 1 tbsp packed Hy-Vee brown sugar, divided
    1 c. peeled, cored, chopped sweet apples
    ¾ c. plus 1 tbsp Hy-Vee chopped pecans, divided


    1. Preheat oven to 375 degrees. In a large bowl, sift together 1 1/2 cups flour, baking powder, baking soda, salt and 2 teaspoons apple pie spice.
    2. In a medium bowl, whisk together eggs, yogurt and 4 tbsp melted butter. Add 1 cup brown sugar and whisk to combine. Add to the dry ingredients and mix until just combined. Fold in apples and 1/2 cup pecans.
    3. Divide the batter among a greased 12-cup muffin tin, filling each about 2/3 full.
    4. In a small bowl, combine remaining flour, apple pie spice, butter, brown sugar, and pecans. Sprinkle about 1 tablespoon of the crumb mixture over the top of each muffin. Bake until inserted toothpick comes out clean, about 25 minutes.
