1 shallot, diced
½ Granny Smith apple, diced, plus additional for garnish
1 ½ tsp. Hy-Vee Select olive oil
6 hard boiled eggs, separated
1 tsp. fresh parsley, chopped
2 tbsp. Hy-Vee light mayonnaise
½ tsp. Hy-Vee Dijon mustard

Directions

  1. In a small skillet, sauté shallot and apple (reserving a few fresh pieces for garnish) in olive oil about 2 minutes; set aside.

  2. Mash yolks with fork. Stir in parsley, mayonnaise, mustard, and apple mixture until well blended. Refill whites, using about 1 tablespoon yolk mixture for each egg white half. Chill to blend flavors. Garnish with diced apple if desired.
