    Chicken salad is served! We've even added apples and almonds to make it even tastier. Serve this salad on top of a healthier bread option such as whole-wheat bread, whole-grain tortillas, or even on top of salad greens.

    2 ½ c. Hy-Vee rotisserie chicken, shredded
    2 apples, cored and chopped
    2 tbsp. red onions, chopped
    ¼ c. Hy-Vee sliced almonds
    ¼ c. Hy-Vee dried cranberries
    ¾ c. Hy-Vee plain Greek yogurt
    1 ½ tbsp. Gustare Vita red wine vinegar
    1 ½ tbsp. Hy-Vee Dijon mustard
    Optional, whole-grain bread, whole-wheat tortilla, crackers, and/or salad greens.

    Directions

    1. Combine chicken, apples, onion, almonds, and dried cranberries in a large mixing bowl. 

    2. In a separate bowl, mix together greek yogurt, red wine vinegar, and Dijon mustard. Pour dressing over chicken mixture and toss until evenly coated. Serve as desired on whole-grain bread, whole-wheat tortilla, crackers, or over salad greens.
