    1 tbsp. Hy-Vee Select olive oil
    ½ c. yellow onion, finely chopped
    ½ c. Hy-Vee slivered almonds
    2 tsp. fresh garlic, minced
    2 c. Hy-Vee long-grain rice
    3 c. Hy-Vee chicken broth
    2 fresh thyme sprigs
    1 c. dried apricots, sliced

    Directions

    1. Preheat oven to 425 degrees.
    2. In an oven-safe Dutch oven, heat oil over medium heat. Add onion, almonds and garlic. Cook for 3 minutes or until onion is softened.

    3. Add rice and continue cooking, stirring constantly, for 1 minute more. Stir in broth and thyme; bring to boiling.

    4. Cover Dutch oven; transfer to oven. Bake for 20 minutes. Remove from oven; let stand, covered, for 5 minutes. Fluff rice with a fork and stir in apricots. Serve immediately.
