2 tsp. fresh garlic, minced | ||
2 c. Hy-Vee long-grain rice | ||
3 c. Hy-Vee chicken broth | ||
2 fresh thyme sprigs | ||
1 c. dried apricots, sliced |

Directions
- Preheat oven to 425 degrees.
In an oven-safe Dutch oven, heat oil over medium heat. Add onion, almonds and garlic. Cook for 3 minutes or until onion is softened.
Add rice and continue cooking, stirring constantly, for 1 minute more. Stir in broth and thyme; bring to boiling.
Cover Dutch oven; transfer to oven. Bake for 20 minutes. Remove from oven; let stand, covered, for 5 minutes. Fluff rice with a fork and stir in apricots. Serve immediately.
