Chicken nuggets are super easy and kid-friendly! Make your own delicious nuggets by marinating in pickle juice and cooking them in the air fryer.
Servings and Ingredients
|1 lbs. Hy-Vee True chicken breasts, cut into 1-inch pieces|
|1 c. Van Holten's Pickleback Mixer|
|1 Hy-Vee large egg|
|½ c. Hy-Vee 2% reduced-fat milk|
|½ c. Full Circle Organic coconut flour|
|½ c. Hy-Vee all-purpose flour|
|1 tbsp. Full Circle Organic powdered sugar|
|½ tsp. Hy-Vee salt|
|½ tsp. Hy-Vee ground black pepper|

- Air fryer
- 2 medium bowls
- Hy-Vee nonstick cooking spray
- Meat thermometer
Preheat air fryer to 375 degrees according to manufacturer's instructions. In a medium bowl, combine egg and milk. In a separate medium bowl, combine coconut flour, all-purpose flour, sugar, salt, and pepper.
Drain pickle juice from chicken. Dip chicken, one piece at a time, into egg mixture covering all sides. Immediately dip chicken into flour mix, and place one layer of coated chicken into air fryer basket; coat with nonstick spray. Air-fry 10 minutes, turning chicken over and coating with nonstick spray, halfway through cooking.
Repeat with remaining chicken pieces until all the chicken is cooked through (165 degrees). Allow to cool slightly before serving.
