7 Recipes to Prep for Easter Brunch... Ahead of Time

And of course, we've got the star of the show: the Easter ham. Follow these tips for prepping your holiday meal in advance, so you'll actually enjoy your Easter brunch with friends and family. So go ahead, make ahead, and maybe enjoy a cocktail (or two) with your guests.

  1. Prep the Ham

    The day before roasting, stud and score the ham and cook the glaze.

  2. Shortcut the Eggs Benedict

    Did you know you can poach eggs ahead of time? Poach eggs as directed and place in bowl of ice water. Refrigerate for up to 1 day. To reheat before serving, dip the eggs, four at a time, in simmering water for about 2 minutes before serving. The sauce can also be made ahead and stored in the fridge for up to one day.

  3. Bake Off the Pastries

    Bake the pastries up to 3 days in advance. Prepare and cool completely. Place in an airtight container and store at room temperature. On the morning of your brunch, simply assemble with berries, lemon curd, and/or vanilla yogurt. 

  4. Prep the Bar

    If you plan to have a cocktail destination station, you can make drinks in advance. Sangria pitchers or mimosas are our recommendations. Just remember to chill your base mixture the night before and then top it with ice or sparkling wine before serving. You can also get a jumpstart on garnishes by slicing citrus and setting out glasses, napkins, and straws. 

  5. Assemble the Casserole

    Make this Donut French Toast Casserole the night before, and then bake it the next morning. Allowing it to chill in the fridge overnight lets each donut soak up a delicious homemade custard.
