¾ c. canned Hy-Vee black beans, rinsed | ||
1 c. Hy-Vee salsa | ||
6 poblano peppers, halved and seeded | ||
1 ½ c. Hy-Vee finely shredded Mexican cheese blend | ||
Chopped fresh cilantro |
Directions
- In a small bowl, combine rice, beans and salsa. Set aside.
- Place pepper halves on a broiler pan. Broil, skin sides up, for 5 minutes. Turn peppers over and fill with rice mixture. Sprinkle with cheese blend. Broil for 1 to 2 minutes more or until cheese is melted. Sprinkle cilantro over top.
