½ c. rice flour
3 tbsp. potato flour
½ tsp. Hy-Vee baking powder
Hy-Vee salt
6 tbsp. Hy-Vee unsalted butter, room temperature
¾ c. Hy-Vee baking cocoa
1 ¼ c. Hy-Vee granulated sugar
2 Hy-Vee large eggs
1 tsp. Hy-Vee vanilla

Directions

  1. Preheat oven to 325 degrees. Butter 8-by-8-by-2-inch baking pan. Set aside.
  2. Whisk together rice flour, potato flour, baking powder and salt. Set aside.
  3. In large saucepan, melt butter and cocoa over low heat, whisking constantly. Remove from heat. Cool slightly, about 5 minutes. This mixture will be very thick.
  4. Stir sugar into cocoa mixture. Beat in eggs, one at a time. Stir in the dry ingredients. Stir in vanilla. Spread in prepared pan.
  5. Bake at 325 degrees. Bake for 25 to 30 or until a wooden toothpick inserted near the center comes out clean.
