Karen Kuzma obtained her master’s degree in nutrition and health sciences with a minor in teaching at the University of Nebraska-Lincoln (UNL). She is a graduate of UNL’s Dietetic Internship Program, and she has an associate degree in culinary art from Southeast Community College-Lincoln. Karen’s specialties include counseling and instruction in the areas of heart disease, diabetes, weight management, sports nutrition and celiac disease, as well as healthy cooking and menu development. She enjoys teaching classes and assisting customers in the Hy-Vee aisles. Karen is ready to provide you with creative and realistic ways to make healthy eating part of your daily routine.

Lauren Huckabee, RD, LMNT, joins the "O" Street wellness team as a second in-store dietitian. She completed her Master’s degree in community nutrition and health promotion at the University of Nebraska-Lincoln (UNL), where she previously completed UNL’s Dietetic Internship program. Lauren enjoys all aspects of wellness and is passionate about helping customers increase their nutrition knowledge and pursue healthy lifestyles. She is excited to teach kids' cooking and wellness classes and interact with customers in the Hy-Vee aisles. Lauren is a member of the Academy of Nutrition and Dietetics and the Nebraska Academy of Nutrition and Dietetics on the state and district level.
