Clear Lemon Filling

Makes 1-1/4 cups.

All you need:

3/4 c. Hy-Vee sugar
3 tbsp Hy-Vee cornstarch
1/8 tsp Hy-Vee salt
3/4 c. water
1 tbsp Hy-Vee butter
2 tsp grated lemon zest
1/3 c. lemon juice
2 drops yellow food coloring, optional

All you do:

In a heavy medium saucepan, whisk together sugar, cornstarch and salt; whisk in water. Cook, stirring constantly over medium heat, until sugar mixture thickens and boils. Boil for 1 minute more, stirring constantly. Remove from heat. Whisk in butter and lemon zest until butter is melted. Gradually stir in lemon juice and, if desired, food coloring. Cover and refrigerate for 2 hours.
