Sundried Tomato with Turkey and Avocado Sandwiches

Serves 6.

All you need:

1 ripe avocado, halved, seeded and peeled
1/4 c. Hy-Vee mayonnaise
1 tbsp fresh lime juice
2 cloves garlic, minced
1 serrano chile pepper, halved, seeded and chopped*
2 tbsp chopped fresh cilantro
1/4 tsp kosher salt
1/8 tsp Hy-Vee black pepper
6 Hy-Vee Bakery multigrain ciabatta rolls, split
1 pound sliced deli sundried tomato turkey
6 slices Hy-Vee Muenster cheese
2 medium tomatoes, sliced
1 small seedless cucumber, thinly sliced
1 1/2 c. alfalfa sprouts
Lettuce leaves, optional

All you do:

For avocado aioli, place avocado, mayonnaise, lime juice, garlic, chile, cilantro, salt and black pepper in a food processor or blender. Cover and process until smooth. Spread cut sides of rolls with aioli.
Fill rolls with turkey, cheese, tomato and cucumber slices and alfalfa sprouts. If desired, line rolls with lettuce leaves.
*Note: Chile peppers contain volatile oils that can burn skin and eyes. When working with chile peppers, wear hand protection.
