Cajun Rice and Shrimp

Serves 4 (about 1 1/4 cups each).

All you need:

1 tbsp Hy-Vee Select olive oil
1/2 c. chopped celery
2 (8.5 oz each) pkg instant red beans and rice, cooked
1 (12 oz) Hy-Vee Fish Market shrimp platter with cocktail sauce
1 1/2 c. frozen sliced okra, thawed

All you do:

In a large skillet, heat olive oil over medium-high heat. Add celery and cook until tender, 3 to 4 minutes. Stir in cooked beans and rice, shrimp, cocktail sauce and okra. Heat mixture through.
