Stuffed Poblano Peppers

All you need:

1 1/2 c. cooked Hy-Vee brown rice
3/4 c. canned Hy-Vee black beans, rinsed
1 c. Hy-Vee salsa
6 poblano peppers, halved and seeded
1 1/2 c. Hy-Vee finely shredded Mexican cheese blend
Chopped fresh cilantro

All you do:

In a small bowl, combine rice, beans and salsa. Set aside.
Place pepper halves on a broiler pan. Broil, skin sides up, for 5 minutes. Turn peppers over and fill with rice mixture. Sprinkle with cheese blend. Broil for 1 to 2 minutes more or until cheese is melted. Sprinkle cilantro over top.
