No-Bake Snowballs

Serves 64 (1 snowball each).

All you need:

1 c. Hy-Vee unsalted butter, at room temperature
3 3/4 c. Hy-Vee powdered sugar
1 tsp Hy-Vee vanilla extract
3/4 c. Hy-Vee flake coconut
2 1/4 c. Hy-Vee quick oats
1/2 c. Hy-Vee mini semi-sweet chocolate chips
Additional powdered sugar, for dusting

All you do:

In a large bowl, beat butter until smooth, about 1 minute. Gradually add powdered sugar and mix until smooth. Add vanilla, mixing well. Add coconut, quick oats and chocolate chips one at a time, mixing well before adding the next.
Scoop into balls using 1 tablespoon of dough for each; place on waxed-paper-lined cookie sheet. Dust entire pan of cookies with powdered sugar. Refrigerate until serving. Store in airtight container in refrigerator for up to 3 to 4 days.
