    3 Italian turkey sausage (12 oz total)
    1 small yellow summer squash, quartered lengthwise and cut into 1-inch-long pieces
    1 small zucchini, quartered lengthwise and cut into 1-inch-long pieces
    1 medium red pepper, seeded and julienned and cut into 1-inch-long pieces
    ¼ c. Hy-Vee zesty Italian dressing, divided
    cooked Hy-Vee linguine, optional

    Directions

    1. In a large skillet, cook sausage links according to package directions. Remove from heat and slice in half lengthwise; cut into 1-inch-long pieces.
    2. Return cooked sausage to skillet and add squash, zucchini, red pepper and 2 tablespoons Italian dressing. Cook over medium-high heat for 6 to 8 minutes or until vegetables are almost tender, stirring occasionally.
    3. Serve with remaining dressing drizzled over top. Serve over cooked linguine pasta, if desired.
