1 (14.5 oz) can stewed tomatoes | ||

1 tsp. garlic powder | ||

olive oil, enough to moisten | ||
9 c. water | ||
12 chicken thighs | ||
5 c. uncooked Uncle Ben's long-grain rice (not instant) |
Directions
- Bring to a boil. Add rice. Simmer about 10 minutes. Turn off heat, cover and let stand approximately 10 minutes.
- In a large skillet, heat onion, garlic, green pepper, stewed tomatoes, cumin, garlic powder, oregano and olive oil.
- Add water and chicken. Cook about 45 minutes.
- Remove chicken. Tear apart meat and return to skillet.
