    1 small onion, chopped finely
    3 clove(s) garlic
    1 green pepper, chopped
    1 (14.5 oz) can stewed tomatoes
    1 tsp. cumin
    1 tsp. garlic powder
    1 tsp. oregano
    olive oil, enough to moisten
    9 c. water
    12 chicken thighs
    5 c. uncooked Uncle Ben's long-grain rice (not instant)

    Directions

    1. Bring to a boil. Add rice. Simmer about 10 minutes. Turn off heat, cover and let stand approximately 10 minutes.
    2. In a large skillet, heat onion, garlic, green pepper, stewed tomatoes, cumin, garlic powder, oregano and olive oil.
    3. Add water and chicken. Cook about 45 minutes.
    4. Remove chicken. Tear apart meat and return to skillet.
