Description

For true south-of-the-border flavor, use a ripe avocado - one that gives a little when squeezed. Take a pass if the fruit is firm.

1 medium avocado, peeled and diced
1 small jalapeno, seeded and diced
½ c. diced white onion
¾ c. minced cilantro
2 garlic cloves, chopped
Juice of a lime
½ tsp. Hy-Vee salt
Crumbled feta cheese, for garnish

Directions

  1. In a food processor, combine tomatillos, avocado, jalapeno, onion, cilantro, garlic, lime juice and salt. Blend until combined. Spoon into a bowl and sprinkle with crumbled feta cheese.
