    1 tbsp. Hy-Vee Select olive oil
    1 medium onion, chopped
    1 green bell pepper, chopped
    2 clove(s) garlic, minced
    3 c. cubed leftover turkey
    ¾ c. Hy-Vee shredded Parmesan cheese, divided
    2 (16 oz each) jars four-cheese Alfredo sauce, divided
    24 jumbo pasta shells, cooked

    Directions

    1. Heat oil in a large skillet. Sauté onion, pepper and garlic in oil until tender, about 5 minutes. Stir together onion mixture, turkey, 1/4 cup cheese and 1/2 cup Alfredo sauce.
    2. Pour 1/2 cup Alfredo sauce on the bottom of a greased 9-by-13-inch baking dish. Fill shells with chicken mixture and arrange them seam-side-down in dish. Cover with remaining sauce. Sprinkle with remaining 1/2 cup cheese.
    3. Bake, uncovered, for 30 minutes or until sauce is bubbling and cheese is melted.
