    1 tsp. Hy-Vee Select olive oil
    ¼ c. chopped onion
    2 tbsp. fresh thyme leaves
    1 clove(s) garlic, minced
    Hy-Vee salt and Hy-Vee pepper, to taste
    4 (4 oz each) lean boneless pork chops
    2 c. red grapes, halved
    ¼ c. dry sherry
    1 tsp. Hy-Vee packed brown sugar

    Directions

    1. Heat oil in a large non-stick skillet over medium heat. Cook onions, thyme and garlic, stirring frequently, about 3 minutes. Season with salt and pepper.
    2. Add pork chops to the pan and cook 6 minutes per side or until internal temperature reaches 145 degrees. Remove pork chops from pan, place on a plate and cover with foil to keep warm.
    3. Increase heat to medium-high and add grapes, sherry and brown sugar to the skillet. Cook, stirring frequently, until grapes are softened, about 5 minutes. Return pork chops and any accumulated juices to the skillet and heat through. Serve pork chops with sauce.
