    3 large onions, sliced
    1 medium green pepper, minced
    3 tbsp. shortening
    1 ½ lbs. ground beef
    2 c. cooked tomatoes
    ¾ c. uncooked rice
    1 tsp. chili powder
    2 tsp. salt
    ⅛ tsp. pepper

    Directions

    1. Preheat oven to 400 degrees.
    2. Saute onion and green pepper in shortening until onions are yellow.
    3. Add ground beef and fry until ground beef falls apart and the meat is no longer pink. Drain off grease.
    4. Add tomatoes, rice, chili powder, salt and pepper.
    5. Pour into greased 2-quart baking dish.
    6. Bake uncovered for 1 hour.
