Surprise your guests with this sweet "sushi roll." It looks like the classic roll, but it is filled with fruit and drizzled with fudge sauce.

4 sheets spring roll wrapper (rice paper)
1 recipe Sticky Sushi Rice
⅓ c. chopped praline nuts, divided
8 medium strawberries, cored and sliced, divided
1 mandarin orange, peeled and segmented, divided
1 mango, peeled, pitted, thinly sliced and cut into matchsticks, divided
Chocolate fudge sauce, optional

    Directions

    1. Soak wrapper in cold water until it softens, about 2 to 3 seconds; remove from water and place flat on a plate or small cutting board. Wet your fingers with water and spread 1/2 cup of the rice evenly onto the wrapper. Sprinkle the rice with 1/4 of the nuts and press lightly. Top the rice-covered wrapper with the sushi rolling mat* and flip the mat and platter over so that the sushi rice-side is down on the rolling mat. Remove the platter.

    2. Arrange 1/4 each of the strawberries, orange and mango in a horizontal line across the center of the wrapper. Grab the rolling mat edge closest to you, keeping the fillings in place with your fingers, and roll the rice-covered wrapper up and over the filling into a tight cylinder, using the mat to shape the cylinder. Pull away the mat and cover finished roll with plastic wrap. Repeat with remaining ingredients.
    3. When ready to serve, remove the plastic wrap. Cut each roll in half, then cut each half into three pieces. Wipe the knife with a moistened towel as necessary to prevent sticking. Carefully place pieces on a platter. Drizzle with fudge sauce and serve immediately.
    4. *TIP: To keep the sushi rolling mat clean, place it in a gallon sized plastic bag. Discard bag when done preparing sushi.
