½ c. diced red onion
1 medium cucumber, peeled, seeded and chopped
¼ c. Hendricksons sweet vinegar and olive oil dressing
3 medium tomatoes, coarsely chopped
½ lbs. fresh mozzarella, cubed
Fresh basil, chopped

Directions

  1. Combine onion and cucumber in a large bowl. Stir in dressing and set aside for 10 minutes.
  2. Meanwhile, combine tomato and mozzarella. Stir into onion mixture.
  3. Sprinkle with basil before serving.
