    1 (8.5 oz) pkg Hy-Vee corn muffin mix
    1 Hy-Vee large egg
    ⅓ c. Hy-Vee milk
    ¾ c. Hy-Vee shredded taco or pepper jack cheese
    ½ c. Hy-Vee diced tomatoes with green chilies, drained well

    Directions

    1. Preheat oven to 400 degrees.
    2. Stir together mix, egg and milk in a medium mixing bowl. Stir in cheese and tomatoes. Fill greased muffin cups 1/2 full.
    3. Bake 15 to 20 minutes or until golden brown.
