½ c. diced red onion
1 medium green bell pepper, chopped
½ c. diced green onion
1 jalapeno pepper, chopped
1 tbsp. minced garlic
1 (15 oz) can Hy-Vee black beans, drained and rinsed
1 (15 oz) can black-eyed peas, drained and rinsed
1 c. zesty Italian salad dressing
1 (5 oz) package Hy-Vee spring mix lettuce

Directions

  1. In a medium bowl, stir together red onion, bell pepper, green onion, jalapeno pepper, garlic, black beans, black-eyed peas and salad dressing. Cover and refrigerate two to three hours or overnight.
  2. To serve, place lettuce leaves in a large bowl. Top with onion mixture.
