    3 large potatoes, scrubbed
    1 lbs. ground beef
    1 (15.5 oz) can Manwich original sloppy joe sauce
    ¾ c. Hy-Vee shredded Colby jack, divided

    Directions

    1. Bake potatoes at 350 degrees for 1 hour or until potatoes are tender. Cool potatoes slightly.
    2. Meanwhile, brown ground beef; drain. Transfer to a slow cooker. Stir in sloppy joe sauce. Cook on HIGH for 1 hour.
    3. Cut each potato into quarters lengthwise. Carefully scoop out flesh leaving 1/4-inch thick skins. Reserve potato flesh for another use.
    4. Divide sloppy joe mixture among potato skins. Top each with 1 tbsp Colby jack cheese and additional toppings if desired.
