    2 tsp. Hy-Vee Select extra-virgin olive oil
    2 (8 oz each) boneless pork loin butterfly chops*
    ¼ tsp. Hy-Vee salt, divided
    ¼ tsp. Hy-Vee black pepper, divided

    Directions

    1. Heat olive oil in a large nonstick skillet over medium-high heat.
    2. Cut each pork loin butterfly chop in half, making 4 pork chops total. Season each pork chop with salt and pepper.
    3. Place pork chops in skillet and cook until golden brown, about 5 minutes. Flip and cook for another 5 minutes or until golden brown and the internal temperature reaches 145 degrees. Let stand 5 minutes before serving.
    4. *Variation: Substitute 4 (4 oz each) boneless lean pork chops for the butterfly chops.
