    Directions

    1. Prepare Mushrooms and Yogurt Sauce: Place mushrooms in shallow bowl; cover with warm water. Soak mushrooms for 10 minutes; drain, servings 2 tablespoons soaking liquid. For yogurt sauce, in a small bowl, combine dried tarragon, 1 tablespoon lemon juice, half of the Greek yogurt and 1/2 teaspoon salt. Set aside at room temperature to allow flavors to blend.

    2. Make Apple Slaw: Cut apple slices into thirds. Whisk together remaining yogurt, red wine vinegar, honey, 1/2 teaspoon each salt and sugar and 1/4 teaspoon pepper in a large bowl to make vinaigrette. Toss cabbage, carrots, red onion and apples with vinaigrette. Refrigerate until ready to serve.

    3. Cook Chicken: Pat chicken dry with paper towels and season with 1/4 teaspoon each salt and pepper. Heat 1 tablespoon olive oil in skillet over medium heat; lightly brown chicken on one side, about 1 minute. Flip chicken; loosely cover pan with foil. Continue cooking 6 to 8 minutes or until internal temperature reaches 165 degrees on an instant read meat thermometer. Remove chicken from pan; place on plate and tend with foil to keep warm.

    4. Saute Mushrooms: Return skillet to burner over medium heat; saute mushrooms with reserved soaking liquid until liquid evaporates and mushrooms are brown on the edges. Remove mushrooms from pan; add to plate with chicken, cover and keep warm.

    5. It's Mealtime! Drizzle 1 tablespoon olive oil onto cut sides of ciabatta rolls. Return skillet to burner over medium heat and toast the rolls cut sides down until edges are lightly browned. Arrange bottom half of rolls on 2 plates, top each with a chicken breast, half the mushrooms and desired amount of yogurt sauce. Serve with apple slaw.
