1 tbsp. olive oil
1 large shallot, thinly sliced
8 oz. trimmed green beans
2 tbsp. reduced-sodium vegetable broth
½ c. halved grape tomatoes
¼ tsp. kosher salt
¼ tsp. freshly ground black pepper
Juice of 1/2 lemon
5 large basil leaves, thinly sliced

Directions

  1. Heat oil in large skillet over medium heat. Add the shallots and saute for 2 to 3 minutes.
  2. Add green beans and stir. Add broth; cover and steam for 2 to 3 minutes, until beans turn bright green and are tender-crisp (al dente).
  3. Add the grape tomatoes. Cover and steam for 1 minute. Uncover and continue to cook until the grape tomatoes are just beginning to soften, about 2 minutes. Add salt and pepper.
  4. Stir in lemon juice and basil before serving.
