    1 egg
    1 (5 oz) can boneless and skinless salmon
    ⅛ c. cornmeal
    ⅛ c. whole wheat breadcrumbs
    ¼ tsp. garlic powder
    ¼ tsp. paprika
    3 green onions, chopped, optional
    Cooking spray or 1 to 2 tsp canola oil
    Toasted bun with lettuce, tomato, cucumber slices, or onions, for serving

    Directions

    1. Beat egg in a bowl.
    2. Drain salmon and add to the bowl. Fluff salmon with a fork and stir into egg mixture until coated.
    3. Add cornmeal, breadcrumbs, garlic powder, paprika and green onions. Stir together.
    4. Divide mixture in half and form two patties.
    5. Coat pan with cooking spray or canola oil. Heat patties on high heat until golden brown. Turn patties only once to avoid breaking them.
    6. Enjoy on a toasted bun with toppings of your choice.
