4 hard-boiled Hy-Vee HealthMarket organic eggs, sliced
1 cucumber, peeled, sliced
1 pt. fresh grape tomatoes, halved
4 oz. crumbled Organic Valley feta cheese
1 ¼ c. Organic Valley low-fat cottage cheese
10 tbsp. light cucumber ranch salad dressing

Directions

  1. Combine lettuce, eggs, cucumber, tomatoes and feta cheese in a large bowl.
  2. Evenly distribute salad among 5 salad bowls. Top individual salads with 1/4 cup cottage cheese and 2 tablespoons of dressing.
