6 Hy-Vee Smart russet potatoes
1 c. Hy-Vee salsa, divided
2 green onions, chopped
Hy-Vee salt and Hy-Vee black pepper, to taste

Directions

  1. Preheat oven to 400 degrees.
  2. Cut potatoes into wedges and toss with 1/3 cup salsa. Place on a greased baking sheet and bake for 40 minutes or until potatoes are tender, basting and stirring often with remaining salsa.
  3. Broil 3 minutes or until golden.
  4. Sprinkle with green onion, salt and pepper before serving.
