    2 c. plus 3 tbsp flour, divided
    1 ½ c. plus 2 tsp sugar, divided
    1 ¼ tsp. salt
    ⅔ c. salad oil
    3 tbsp. milk
    3 c. chopped rhubarb
    ½ tsp. nutmeg
    3 eggs
    1 tbsp. margarine, melted

    Directions

    1. Preheat oven to 400 degrees.
    2. Whisk together 2 cups flour, 2 teaspoons sugar and salt in a large bowl.
    3. Whisk together oil and milk in a small bowl. Pour over dry ingredients and mix well. Reserve one-third for topping.
    4. Press remaining into a 9- or 10-inch deep-dish pie pan to form a crust.
    5. Fill crust with rhubarb. Combine nutmeg, 1-1/2 cups sugar, eggs, melted margarine and 3 tablespoons flour thoroughly. Pour over rhubarb. Sprinkle reserved crumb mixture over top.
    6. Bake for 15 minutes. Reduce heat to 350 degrees and bake for an additional 30 to 40 minutes.
