    2 egg whites (1/4 cup)
    1 c. brown sugar
    ⅓ c. oil
    ½ c. skim milk
    1 tsp. vanilla
    1 c. plus 2 tbsp flour
    ½ tsp. baking soda
    ⅛ tsp. salt
    1 tsp. cinnamon
    1 c. raisins
    1 ½ c. uncooked quick oats

    Directions

    1. Preheat oven to 375 degrees. Spray a baking sheet with nonstick cooking spray.
    2. Combine egg whites, brown sugar, oil, skim milk and vanilla. Stir in flour, baking soda, salt and cinnamon. Fold in raisins, then oatmeal.
    3. Drop by teaspoonfuls on prepared baking sheets.
    4. Bake for 12 to 15 minutes. Shorter baking time results in a chewier cookie; longer time gives a crisp cookie.
