1 (15 oz) can pumpkin or another squash
½ c. low-sodium vegetable broth
2 tsp. curry powder
1 tsp. brown sugar
½ tsp. dried oregano
½ tsp. ground cinnamon
½ tsp. ground nutmeg
½ tsp. red pepper flakes
1 c. buttermilk
Fresh cilantro, optional

Directions

  1. In a saucepan, add all ingredients except buttermilk and cilantro.
  2. Bring to a simmer for 10 minutes.
  3. Remove from heat and stir in buttermilk.
  4. Garnish with fresh cilantro, if desired.
