    4 (4 oz each) cod fillets
    ¼ c. Idahoan roasted garlic mashed potato flakes

    Directions

    1. Preheat oven to 400 degrees.
    2. Spread 1 teaspoon pesto on top of each fillet. Coat entire fillet in potato flakes.
    3. Bake 10 minutes; broil another 3 to 4 minutes or until top is crispy.
