    1 ½ c. apple cider or Hy-Vee apple juice
    2 tbsp. Hy-Vee light soy sauce
    1 tbsp. packed Hy-Vee brown sugar
    ½ tsp. Hy-Vee lemon pepper
    2 (4 oz each) lean boneless pork chops
    1 c. uncooked Hy-Vee instant brown rice

    Directions

    1. To make marinade, whisk together apple cider, soy sauce, brown sugar and lemon pepper. Reserve 1 cup; refrigerate until needed.
    2. Combine remaining marinade and pork chops in a resealable bag. Refrigerate, turning occasionally, for at least 30 minutes, up to 24 hours.
    3. Remove chops from marinade; discard marinade. Broil chops on a foil-lined baking sheet for 6 minutes. Turn; broil an additional 5 minutes or until internal temperature reaches 145 degrees.
    4. Meanwhile, prepare brown rice according to package directions using reserved marinade instead of water.
