Pineapple-Peach Dipping Sauce

1 tsp. olive oil | ||
1 clove garlic, minced | ||
½ c. chopped red bell pepper | ||
½ c. chopped sweet onion | ||
½ c. sugar-free peach preserves | ||
3 tbsp. grainy German mustard | ||
¼ c. honey | ||
1 to 2 tablespoons horseradish, depending upon personal tastes | ||
⅓ c. crushed pineapple, canned in its own juice, drained with 2 tablespoons juice reserved | ||
Salt and pepper, to taste |
Directions
- In a medium saucepan, heat olive oil over medium heat until shimmering. Add garlic, bell pepper and onion. Sauté for 5 minutes, stirring frequently.
- Add peach preserves, mustard, honey, horseradish, pineapple and reserved juice; simmer 3-4 minutes or until slightly syrupy. Add salt and pepper to taste. Set aside if using immediately or chill until needed.
