Pineapple Cheese Log

    1 (8 oz) pkg fat-free cream cheese, softened
    1 (4 oz) can crushed pineapple, drained well
    2 tbsp. finely chopped green bell pepper
    1 tbsp. finely chopped onion
    1 tsp. seasoned salt
    finely chopped fresh parsley

    Directions

    1. Mix together cream cheese and well-drained pineapple. Stir in green pepper, onion and seasoned salt. Cover and refrigerate until thoroughly chilled.
    2. Shape into a log. Roll in chopped parsley. Chill covered overnight.
    3. Serve with reduced-fat crackers.
