    1 c. packed brown sugar
    ½ c. butter
    2 tbsp. light corn syrup
    ½ c. chopped pecans, divided
    6 frozen Van's multi-grain waffles, toasted and cubed, divided
    6 Hy-Vee large eggs, beaten
    2 c. skim milk
    1 tsp. vanilla extract
    1 ½ tsp. ground cinnamon

      1. In a small saucepan, combine brown sugar, butter and corn syrup. Cook over medium heat, stirring constantly, until thickened.
      2. Pour sauce into a 2-quart rectangular baking dish and sprinkle with 1/4 cup pecans. Place 3 waffles on top of the sauce, sprinkle with the remaining pecans and cover with the remaining 3 waffles.
      3. Combine beaten eggs, milk, vanilla and cinnamon. Pour egg mixture evenly over waffles, cover the baking dish, and refrigerate for 4 hours or overnight.

      4. Preheat oven to 350 degree. Uncover and bake in preheated oven for 55 to 60 minutes or until a knife inserted near center comes out clean. Let stand for 10 minutes before serving.
