    1 lbs. asparagus, trimmed
    1 tbsp. Hy-Vee Select olive oil
    2 tbsp. Hy-Vee Select white wine vinegar
    ¼ c. Hy-Vee orange juice
    ½ tsp. Hy-Vee salt
    ¼ tsp. Hy-Vee black pepper
    Chopped fresh parsley, optional

    Directions

    1. Preheat oven to 375 degrees.
    2. Arrange asparagus in a single layer on a baking sheet.
    3. Whisk together olive oil, white wine vinegar, orange juice, salt and pepper. Drizzle over the asparagus.
    4. Roast for 8 to 12 minutes or until fork tender.
    5. Sprinkle with chopped parsley, if desired.
