2 c. graham cracker crumbs
1 c. plus 6 tbsp sugar, divided
½ c. margarine, melted
2 (8 oz each) pkg cream cheese, softened
¼ tsp. salt
1 c. evaporated milk
2 tsp. lemon juice
2 tsp. vanilla
3 c. Cool Whip whipped topping, thawed

Directions

  1. Preheat oven to 350 degrees.
  2. Combine graham cracker crumbs, 6 tablespoons sugar and margarine. Reserve some for topping. Firmly press remaining crumbs in a 9-by-13-inch pan. Bake for 8 minutes.
  3. Beat cream cheese until smooth and fluffy. Gradually add remaining 1 cup sugar, beating constantly. Add salt. Stir in milk, lemon juice and vanilla. Fold in Cool Whip, scraping bowl often. Pour over crust. Sprinkle with reserved crumb mixture.
  4. Refrigerate for at least 4 hours, overnight if possible.
