2 c. graham cracker crumbs | ||
1 c. plus 6 tbsp sugar, divided | ||
½ c. margarine, melted | ||
2 (8 oz each) pkg cream cheese, softened | ||
¼ tsp. salt | ||
1 c. evaporated milk | ||
2 tsp. lemon juice | ||
2 tsp. vanilla | ||
3 c. Cool Whip whipped topping, thawed |
Directions
- Preheat oven to 350 degrees.
- Combine graham cracker crumbs, 6 tablespoons sugar and margarine. Reserve some for topping. Firmly press remaining crumbs in a 9-by-13-inch pan. Bake for 8 minutes.
- Beat cream cheese until smooth and fluffy. Gradually add remaining 1 cup sugar, beating constantly. Add salt. Stir in milk, lemon juice and vanilla. Fold in Cool Whip, scraping bowl often. Pour over crust. Sprinkle with reserved crumb mixture.
- Refrigerate for at least 4 hours, overnight if possible.
