1 ½ tbsp. Bertolli extra virgin olive oil
2 lbs. small red new potatoes, rinsed and quartered
½ tsp. crushed hot red pepper
salt and freshly ground black pepper, to taste

Directions

  1. Heat oil in nonstick skillet until hot enough to sizzle a piece of potato.
  2. Add potatoes.
  3. Turn the heat to medium-high and fry the potatoes, turning often, until evenly browned.
  4. Sprinkle with crushed red pepper. Cover and cook until potatoes are tender, about 10 minutes.
  5. Sprinkle with salt and pepper.
