Mushroom Rice

⅓ c. Hy-Vee butter or margarine | ||
8 oz. sliced Monterey mushrooms | ||
½ c. thinly sliced green onions | ||
2 c. Hy-Vee beef broth | ||
1 c. Hy-Vee long-grain white instant rice | ||
salt and pepper, to taste | ||
½ c. sliced almonds |
Directions
- Melt butter in saucepan and saute mushrooms and onions in butter for 2 to 3 minutes. Add beef broth and rice. Bring to a boil. Reduce heat and simmer until all liquid is absorbed, about 20 minutes.
- Remove to serving bowl. Season with salt and pepper and sprinkle with almonds on top.
