    2 c. frozen hash brown potatoes
    1 c. diced fully cooked ham
    ½ c. chopped onion
    1 small green pepper, chopped
    2 tbsp. vegetable or corn oil
    6 large eggs
    salt and pepper, to taste
    1 c. shredded Cheddar cheese

    Directions

    1. Heat oil in a large skillet over medium-high heat. Saute potatoes, ham, onion and green pepper for 10 minutes or until potatoes are tender.
    2. In a small bowl, beat eggs with salt and pepper. Pour into skillet. Cook, stirring occasionally, until eggs are set.
    3. Remove from heat and gently stir in cheese. Serve immediately.
