2 c. frozen hash brown potatoes | ||
1 c. diced fully cooked ham | ||
½ c. chopped onion | ||
1 small green pepper, chopped | ||
2 tbsp. vegetable or corn oil | ||
6 large eggs | ||
salt and pepper, to taste | ||
1 c. shredded Cheddar cheese |
Directions
- Heat oil in a large skillet over medium-high heat. Saute potatoes, ham, onion and green pepper for 10 minutes or until potatoes are tender.
- In a small bowl, beat eggs with salt and pepper. Pour into skillet. Cook, stirring occasionally, until eggs are set.
- Remove from heat and gently stir in cheese. Serve immediately.
