|2 c.||frozen hash brown potatoes|
|1 c.||diced fully cooked ham|
|½ c.||chopped onion|
|1||small green pepper, chopped|
|2 tbsp.||vegetable or corn oil|
|salt and pepper, to taste|
|1 c.||shredded Cheddar cheese|
- Heat oil in a large skillet over medium-high heat. Saute potatoes, ham, onion and green pepper for 10 minutes or until potatoes are tender.
- In a small bowl, beat eggs with salt and pepper. Pour into skillet. Cook, stirring occasionally, until eggs are set.
- Remove from heat and gently stir in cheese. Serve immediately.
