    2 tbsp. Organic Valley butter
    ¼ c. chopped onion
    ¼ c. chopped celery
    2 tbsp. flour
    2 c. nonfat milk
    1 (1.5 oz) pkg four-cheese sauce mix
    1 tbsp. parsley
    4 c. peeled, sliced potatoes
    1 c. cubed ham
    ½ c. shredded cheddar cheese

    Directions

    1. In a large saucepan, melt butter. Sauté onion and celery in butter until tender, about 5 minutes.
    2. Stir in flour. Whisk in milk. Bring to a simmer. Whisk in cheese sauce and parsley. Stir in potatoes. Bring to a boil. Stir in ham.
    3. Pour into a greased 2-quart baking dish. Cover. Bake 40 minutes.
    4. Sprinkle with cheese. Bake uncovered an additional 5 minutes or until cheese is melted and browned.
